Jack-O-Lantern Stuffed Bell Peppers Recipe:
1.Preheat your oven to 400 degrees F. To start the filling for the peppers, begin by toasting the couscous in a large pan with 1 tbsp of olive oil. Toast for about 5 minutes over medium heat until golden brown.
2. In a medium saucepan, add 1 & 3/4 cups chicken or vegetable stock, toasted couscous, and a pinch of salt and bring to a boil. Once it is boiling, cover it and turn down the heat to medium-low and simmer until all the liquid has been absorbed, about 10-12 minutes.
3. While the couscous is cooking, sauté onion and garlic with 2 tbsp of olive oil until translucent. Add carrots, then zucchini, then mushrooms until softened to your preference. Season with fresh rosemary, smoked paprika, salt, and pepper. Once the couscous is fully cooked, fluff it with a fork and add the couscous into the sautéed vegetables and stir to combine. Add the feta cheese, and check for seasoning.
4. For the peppers, cut off the tops and de-seed them. Carefully make jack-o-lantern faces on the flat side of each pepper (triangle eyes and pointed-teeth smiles). Stuff the peppers with the couscous mixture and put the top back on, and place in a large baking dish with rimmed edges. Bake for 45 minutes to an hour until peppers are tender and golden brown. Top with minced parsley if desired.

VIDEO: Make this Roasted Feta Appetizer Dish for Valentine's Day!
Enjoy this appetizer on it’s own, or add it to a charcuterie board with a hunk of crusty bread to dip in evoo and a glass of wine (chilled white is our recommendation!). Perfect for just you or to share!
Ingredients:
Directions:
1. Heat oven to 400 F
2. In a small pan lined with aluminum foil to help transfer to a plate, put a little olive oil down and the feta cheese block into the middle of the pan. Drizzle more olive oil over the top of the feta. Cook up to 30 min, or right before it starts to melt and is soft and springy to the touch. If your feta is quite thick, you'll need to cook it longer as you test it for softness.
3. Pull out of the oven and sprinkle on your sea salt, pepper, chili flakes, thyme and mint leaves.
4. Place back in the oven on broil up to 10 min, however we recommend starting to check it within 5 min to brown the top to your liking.
5. Take out when browned to your liking and remove it from the pan, placing it on a serving plate. Lightly drizzle EVOO over the entire dish, decorate with edible flowers.
6. Slice and warm your rustic baguette
7. Use a knife to cut chunks of feta and place on a slice of bread, pour over the honey and enjoy!

This Holiday Honeycrisp Salad is full of flavor and texture, with fresh apple slices, toasted pecans, crisp fennel pieces, tangy blue cheese, and Persian cucumber. It's the perfect Thanksgiving or Christmas salad, for a dinner party, or a delicious weeknight dinner.
Ingredients:
Instructions:
1. To prepare the vinaigrette, measure olive oil, juicy pear balsamic vinegar, honey, lemon juice, salt and pepper into a mason jar. Tightly screw on the lid and shake vigorously until everything is thoroughly combined.
2. Place apple slices in a large plastic baggie and squeeze the fresh lemon juice (from the 1/2 lemon) over top. Close bag and shake to coat.
3. In a large salad bowl, layer salad greens, apple slices, pecans, cucumber, and blue cheese.
4. Just before serving, dress salad with desired amount of vinaigrette, and toss till all ingredients are evenly coated.

For The Cheesecake
1. Preheat oven to 325 degrees Fahrenheit and grease an 8" or 9" springform pan with cooking spray. Make cheesecake filling: In a large bowl using a hand mixer (or in a stand mixer using the paddle attachment), beat cream cheese and brown sugar. Add eggs, one at a time, then sour cream, flour, vanilla, and salt.
2. Make crust: In a large bowl, mix together graham cracker crumbs, vanilla flavored olive oil, brown sugar, and salt. Press mixture into prepared pan.
3. Pour filling over crust. Wrap bottom of pan in aluminum foil and place on a baking sheet. (If you want to bake the cheesecake in a water bath, wrap bottom of pan and place in a deep pan.) Bake until center of cheesecake only slightly jiggles, about 1 hour and 30 minutes. Turn off heat, prop open oven door, and let cheesecake cool in oven, 1 hour, then remove aluminum foil and refrigerate cheesecake in pan until firm, at least 5 hours and up to overnight.
4. Before serving, make pecan pie topping: In a nonstick skillet over low heat, melt butter and brown sugar until bubbly (keep heat low to avoid burning butter). Stir in cinnamon, heavy cream, pecans, and salt until completely coated, then remove from heat and let cool and slightly thicken. (You can make topping up to an hour in advance and keep at room temperature; don't refrigerate as the butter will solidify.)
5. Release springform pan from cheesecake and spoon over cooled pecan pie topping and serve.

1. Slice rustic baguette in half long wise, so you have two long pieces. Then you will slice one side in at an angle and keep switching cuts until you have triangular pieces. (Repeat for the other side). Brush each piece with a light coating of Wild Groves' Foxy Blend EVOO. Crisp in the oven on at 425 degrees Fahrenheit, watching very closely until lightly toasted. Approximately 2-3 minutes.
2. Meanwhile on the stove begin to simmer 1/2 cup of Wild Groves' Blackberry Balsamic Vinegar over medium heat. Once simmering, lower temperature down to low heat. (This step is so important, slow and steady, with low temperature). This will prevent the balsamic from burning and becoming too hard. Stirring occasionally, cook until vinegar has reduced by half and coats the back of the spoon, approximately 20 minutes.
3. Cut burrata cheese in half and spread cheese over top of the toasted bread pieces.
4. Top each piece with desired amount of blackberries and blueberries. (I prefer a couple of each).
5. Add a slice of prosciutto to each crostini.
6. Drizzle with Blackberry reduced balsamic glaze.
7. Add crumbles of pistachios over the top and Enjoy!

In a large bowl, mix the flour, baking powder, baking soda and salt together with a fork.
In another bowl, mix the olive oil, sugar, egg, apple sauce and vanilla with a hand held mixer.
Pour half of the dry ingredients into the bowl of the wet ingredients and mix with your hand-held mixer. Add the other half of the dry ingredients and mix again. You may need to scrape the sides of the bowl as you do this.

3. Add in diced tomatoes, fresh tomatoes (if using), vegetable stock and salt and pepper and bring to a boil.
4. Once boiling put heat on low and add beans. Let simmer for 30 minutes
5. Add in vinegar, kale, and basil.
6. (Optional) finish off with an extra drizzle of Herbs De Provence Flavored Olive Oil
7. Serve immediately or store in fridge or freezer

Directions:
1. Finely chop the tomatoes and coriander (stalks and all) and place into a large bowl
2. Peel and finely chop the onion, deseed and finely chop jalapenos, then scrape into the bowl. Peel and finely grate the garlic.
3. Squeeze in the juice from 1 lime, add 2 Tablespoons of Wild Groves' Jalapeno Habanero Crushed Olive Oil, and mix well. Season to taste with sea salt, black pepper and more lime juice, if needed.
4. Serve straightaway or cover and set aside for a few hours to let all the flavors develop.
