Flavor & Aroma - It is cloudy and golden in color, with strong fruit flavors, like ripe pear, peaches and guava. It finishes with a complex herbaceousness, and a peppery kick from the extremely high polyphenols. Truly like no other olive oil you'll ever taste, it's the freshest EVOO you'll find!

**Olio Nuovo is like fresh fruit & vegetables, and should be consumed right away to enjoy the fresh flavors and health benefits of it's high polyphenols. We recommend it be consumed within 4 months of harvest.

Test Results - meets COOC Test Standards for EVOO
Is Olio Nuovo Certified by the COOC? Although our Olio Nuovo meets all COOC standards (test results above), the COOC does not yet have a program to certify Olio Nuovo EVOO's due to their short shelf life. They have announced they will start a program for California Olive Oil producers in 2020. Therefore our Olio Nuovo does not carry the COOC seal at this time, but still meets all standards for being EVOO per test results above.
OLIO NUOVO means "New Oil" in Italian, and is a celebration of the beginning of harvest season for olive oil. This oil is literally harvested, pressed, bottled and shipped to you in just a few days, making it the freshest and healthiest EVOO you can possibly get! Some call it Olio Nuevo (Spanish) and others Olio Novello (French). Either way, it’s the BEST!

That's easy, two reasons - the health benefits and fresh flavor! When olive oil is first made, it's at its absolute best, full of polyphenols (antioxidants) and fresh fruity flavor.
"COOC Update and Change to the Olio Nuovo Recognition Program"
"Last month, the 2019-2020 details of the Seal Certification Program were released, which included the rollout of an "Olio Nuovo Recognition" program with optional bottle sticker. We have decided to put this program on hold until next year. It is essential that we accurately and fairly differentiate unracked/unfiltered oils—which are not eligible for certification due to its short shelf life— from COOC certified extra virgin olive oils. To this end, we realized more time and planning is necessary to achieve this goal.
In the coming year the COOC will establish best practice for Olio Nuovo production, labeling, marketing and utilization of best by/harvest dates. We also intend to address this type of product and its marketing in our membership at the Annual Member Meeting in March 2020. "
