EVOO is a superfood, high in polyphenols. Polyphenols are antioxidants that attack bad "free radicals" in our bodies, ultimately helping us live longer. EVOO's high in polyphenols have also been shown to have anti-inflammatory benefits when consumed regularly.
More Info: Koroneiki, a famous Greek varietal, very small in size compared to other olives. This variety is known for its more robust characteristics, and high polyphenol counts. It's also one of the highest yielding olives, producing up to 48 gallons/ton on a good year! It's typically planted in Super High Density (SHD) here in California and is mechanically harvested.
This oil on it's own is delicious over a fresh garden salad by itself with a sprinkle of sea salt - it's one of our favorite salads! Pour it on thick too, you'll be delighted.
