Confetti Olive Oil Birthday Cake

The Cake That Brings the Party šŸŽ‚šŸ„³

Ingredients:Ā 

Cake

Frosting

  • 1 1/2 cup unsalted butter, room temperatureĀ 
  • 5 cups powdered sugar
  • 1 tbsp vanilla extract
  • 2-3 tbsp heavy cream
  • sprinkles for topping

Directions

Make the Cake

  1. Preheat the oven to 325°F. Grease three 8 inch cake pans and line the bottoms with parchment paper.
  2. In a stand mixer, beat the eggs on high speed for 3-5 minutes, until light, fluffy, and pale in color.
  3. With the mixer still running, slowly drizzle in the olive oil and continue beating until the mixture becomes thick and creamy.Ā 
  4. Add the buttermilk, cake mix, and sprinkles. Mix on low speed for about 1 minute, until well combined.Ā 
  5. Divide the batter evenly between the prepared cake pans. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.Ā 
  6. Allow cakes to cool in the pans for 5-10 minutes before carefully removing and transferring to a wire rack to cool completely.Ā 

Make the Frosting

  1. In a stand mixer fitted with the paddle attachment, beat the butter until smooth and creamy.Ā 
  2. Gradually add the powdered sugar, one cup at a time. As the frosting thickens, mix in the vanilla extract and heavy cream until light and spreadable.Ā 

Assemble the Cake

  1. Spread a thin layer of buttercream between each cake layer.Ā 
  2. Apply a crumb coat - a very think layer of frosting around the entire cake to seal in the crumbs - then refrigerate for about 20 minutes.Ā 
  3. Once chilled, frost the cake with the remaining buttercream and finish with extra sprinkles for the ultimate celebration cake!Ā
