Ingredients:Ā
Cake
- 2 boxes Vanilla Olive Oil Cake Mix
- 6 large eggs
- 1 1/3 cup Wild Groves Vanilla Olive Oil
- 1 1/2 cup buttermilk
- 3/4 cup rainbow sprinkles (jimmies work best)
Frosting
- 1 1/2 cup unsalted butter, room temperatureĀ
- 5 cups powdered sugar
- 1 tbsp vanilla extract
- 2-3 tbsp heavy cream
- sprinkles for topping
Directions
Make the Cake
- Preheat the oven to 325°F. Grease three 8 inch cake pans and line the bottoms with parchment paper.
- In a stand mixer, beat the eggs on high speed for 3-5 minutes, until light, fluffy, and pale in color.
- With the mixer still running, slowly drizzle in the olive oil and continue beating until the mixture becomes thick and creamy.Ā
- Add the buttermilk, cake mix, and sprinkles. Mix on low speed for about 1 minute, until well combined.Ā
- Divide the batter evenly between the prepared cake pans. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.Ā
- Allow cakes to cool in the pans for 5-10 minutes before carefully removing and transferring to a wire rack to cool completely.Ā
Make the Frosting
- In a stand mixer fitted with the paddle attachment, beat the butter until smooth and creamy.Ā
- Gradually add the powdered sugar, one cup at a time. As the frosting thickens, mix in the vanilla extract and heavy cream until light and spreadable.Ā
Assemble the Cake
- Spread a thin layer of buttercream between each cake layer.Ā
- Apply a crumb coat - a very think layer of frosting around the entire cake to seal in the crumbs - then refrigerate for about 20 minutes.Ā
- Once chilled, frost the cake with the remaining buttercream and finish with extra sprinkles for the ultimate celebration cake!Ā
