Bright, Bold, & Made for Summer đ˝âď¸
Ingredients:
- 1 bunch cilantro, roughly chopped
- 1 handful cherry tomatoes, quartered
- 4-5Â radishes, thinly sliced
- 1Â avocado, cubed
- 2-3 ears corn
- 1 handful tortilla chips, lightly crushed
- 2Â green onions, chopped
- 1 small block cotija cheese, crumbled
- 1 head romaine lettuce, chopped
- 2-3 tbsp Wild Groves Persian Lime Olive Oil
- 1 pinch Wild Groves Roasted Garlic Sea Salt
Directions:
1. Grill the Corn
Grill or roast the corn until lightly charred and cooked to your preferred doneness. Let cool slightly, then slice kernels from the cob.
2. Prep the Ingredients
- Chop the romaine lettuce
- Quarter the cherry tomatoes
- Roughly chop the cilantro
- Cube the avocado
- Slice the radishes
- Chop the green onions
- Crumble the cotija cheese
- Lightly crush the tortilla chips
3. Assemble the Salad
Spread the chopped romaine into a large serving bowl or platter. Arrange the toppings in colorful rows or sections for a striped effect.
4. Finish & Serve
Drizzle generously with Wild Groves Persian Lime Flavored Olive Oil and sprinkle with Wild Groves Roasted Garlic Sea Salt. Pair with your favorite main dish and dig in!
