Sweet & Smokey Baked Beans

Smokey, Saucy, Backyard BBQ Perfection! 

Ingredients:

  • 4 cans (15oz) pinto beans (or your favorite white beans), drained and rinsed
  • 8 strips bacon, cooked and chopped (optional)
  • 1 small white onion, diced
  • 4 cloves garlic, minced
  • 1 cup water (plus more as needed for desired consistency)
  • 1/2 cup Wild Groves White Balsamic Vinegar
  • 2 tbsp Wild Groves Sweet Toasted Garlic Mustard
  • 4 tbsp Wild Groves Orange Blossom Honey
  • 2 tsp apple cider vinegar
  • 2 tbsp tomato paste
  • 6 tbsp Wild Groves Applewood Mesquite Smoked Olive Oil, divided
  • 1 tsp smoked paprika
  • 1/2 tsp salt (plus more to taste)
  • 1 tsp black pepper

Directions:

Cook the Bacon (optional)
Cook bacon using your preferred method and roughly chop. Set aside.

Build the Base
In a large pot, heat roughly 2 tbsp of olive oil over medium heat. Add diced onion and cook until softened, about 3-5 minutes. Stir in garlic and cook for another 30 seconds, until fragrant.

Create the Sauce
Add the balsamic vinegar, honey, mustard, tomato paste, apple cider vinegar, smoked paprika, and remaining olive oil. Stir well and simmer for 3-5 minutes, until slightly thickened and fully combined. 

Simmer the Beans
Add the beans and cooked bacon to the pot, stirring well to coat everything in the sauce. Pour in the water, bring back to a gentle simmer, then reduce heat to low. 
Cook for 15-20 minutes, stirring occasionally, until thick, rich, and saucy. Add additional water as needed to reach your preferred consistency. Season with salt and pepper to taste before serving.
