What our customers love about Olio Nuovo
New Oil, Once a Year
Olio Nuovo means “new oil” in Italian.
It’s the first olive oil of the new harvest, made from olives that were just picked and pressed, and released while its fresh, green character is at its peak.
It’s naturally cloudy and golden green. That’s what new oil looks like before it’s been filtered and settled on a shelf for months.
The sooner you enjoy it, the better. We recommend using it within 4 months of harvest.

Good to Know / FAQ
Olio Nuovo is a finishing oil. Drizzle it over crusty bread, salads, roasted vegetables, fish, pasta, eggs, and soups, where its bright, peppery character can shine on its own.
