Dinner with a Tropical Twist🍍🌴
Ft. Sex on the Beach Balsamic and Persian Lime Olive Oil
Bring a taste of the tropics to your dinner table with this fresh, flavor-packed mahi mahi recipe. Served over creamy coconut lime rice and topped with a vibrant pineapple mango salsa. It's an easy summer meal that's bright, refreshing, and bursting with island-inspired flavor.
Ingredients
Coconut Lime Rice

2 cups jasmine rice

1 can full fat coconut milk

1 1/2 cup water

1 tsp salt

1 tsp Persian Lime Olive Oil

Zest of 1 lime

1 tsp Sugar
Mahi Mahi
-
4 mahi mahi fillets (or other preferred fish)

2 tbsp Persian Lime Olive Oil

Salt & pepper
Tropical Salsa
-
¼ cup Sex on the Beach Balsamic - reduced
-
2 tbsp Persian Lime Olive Oil
-
1 clove garlic, minced
-
1 cup diced pineapple
-
1 mango, diced
-
¼ cup red onion - diced
-
1 jalapeño, finely diced
-
Juice of ½ lime
-
Salt
-
Cilantro
Instructions

Make the Coconut Lime Rice -

- In a medium saucepan, rinse the jasmine rice under cold water 2–3 times. Drain well using a colander or fine-mesh sieve, then return the rice to the saucepan. Add the coconut milk, water, salt, sugar, and Persian Lime Olive Oil. Bring to a gentle boil, then reduce the heat to low, cover, and simmer for 20 minutes. Remove the lid and continue cooking for 3–5 minutes, or until any remaining liquid has evaporated. Remove from the heat, fluff with a fork, and stir in the lime zest before serving.

Reduce the Balsamic (optional)

- Pour the Sex on the Beach Balsamic into a small saucepan and bring to a gentle simmer over medium-low heat. Cook for 5 - 8 minutes, stirring frequently, until reduced and slightly syrupy. Remove from the heat and let cool.

Prepare the Tropical Salsa

- In a medium bowl, combine the balsamic, Persian Lime Olive Oil, garlic, pineapple, mango, red onion, jalapeño, lime juice, cilantro, and a pinch of salt. Toss gently to combine and let the salsa rest for 10–15 minutes so the flavors meld.

Cook the Mahi Mahi

- Pat the mahi mahi fillets dry and brush both sides with the Persian Lime Olive Oil. Season evenly with salt & pepper.
- Heat a large skillet over medium-high heat. Cook the fillets for 3 - 4 minutes per side, or until the fish is opaque and flakes easily with a fork.

Grab your plates, add a scoop of rice, top with a mahi mahi fillet, and spoon the tropical salsa generously over the fish. Garnish with additional cilantro and lime wedges.
