Bacon Wrapped Asparagus

Crisp asparagus wrapped in savory bacon for a simple, irresistible side dish. đŸ„“

Ingredients:

  • 1 bunch asparagus
  • 1 package bacon
  • 3 tbsp Wild Groves Robust Blend EVOO
  • 1 tsp black pepper

Directions: 

  1. Preheat the oven to 375°F.
  2. Rinse the asparagus and pat dry. To find the natural tender point, gently bend each spear until it snaps, then discard the woody ends. 
  3. Toss the asparagus in the olive oil and season with black pepper. 
  4. Slice the bacon strips in half lengthwise for a better bacon to asparagus ratio. Starting at the top of the spear, wrap the bacon at a slight angle to secure it, then continue spiraling it down the length of the asparagus. Repeat until all spears are wrapped. 
  5. Place the wrapped asparagus on a wire rack set over a foil lined baking sheet. 
  6. Bake for 30 minutes. For extra crispiness, finish under the broiler for a few minutes until the bacon is golden and crisp. 
    *Optional - For an even crispier texture, you can partially cook the bacon beforehand, let it cool, and then wrap the asparagus before baking.
