These Double Chocolate Brownies are a rich and decadent treat that can be made with all pantry staples, including our Kitchen Blend Extra Virgin Olive Oil. These brownies are also customizable – add in walnuts, sprinkles, crushed Oreo pieces, crushed pretzels, or even mini marshmallows to make them extra fun! If you're a mint chocolate fan, add in peppermint extract to make a peppermint brownie.
Double Chocolate Brownie Recipe:
Adapted from The Big Man's World
- 2 tbsp ground flax
- 6 tbsp brewed coffee (i used cold brew)
- 8 oz chocolate bar or chips
- 1 cup coconut palm sugar can use any granulated sweetener
- 6 tbsp olive oil
- 1 tsp vanilla extract
- 3/4 cup + 2 tablespoons all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 1/4 cup cocoa powder
Instructions:
First, preheat your oven to 350 degrees. Spray a square baking tray with oil and set aside. Then, prepare your flax egg by combining the flax and the coffee. Let this sit for about 10 minutes until it thickens. Then, add your 8oz of melted chocolate to this mixture along with the sugar, vanilla extract, and olive oil. Stir to combine. Then, add in the flour, salt, baking powder, and cocoa powder. Stir gently and don’t overmix! Pour into your baking pan with chocolate chips on top and bake for 30-35 minutes.
