Fruit and Nut Granola Bars

This recipe is for everyone who experiences the daily 3pm snack attack and also wants to make healthy choices. These vegan, gluten-free olive oil granola bars are the perfect portable snack for school, work, or to munch on at home. We used our Kitchen Blend Extra Virgin Olive Oil in this recipe along with oats, almond butter, flax meal, maple syrup, and fun add-ins to make a satisfying snack that everyone will enjoy.

Fruit and Nut Granola Bar Recipe:

Dry Ingredients:

  • 1 & 1/2 cups rolled oats
  • 1/2 cup oat flour
  • 1/4 tsp salt
  • 1 tsp cinnamon

Wet Ingredients:

  • 2 flax eggs (mix 2 tbsp ground flax + 6 tbsp water and let sit for 5-10 minutes)
  • 1/4 cup Kitchen Blend Extra Virgin Olive Oil
  • 1/2 cup almond butter, crunchy or smooth
  • 1/3 cup maple syrup
  • 2 tsp vanilla extract

Optional add-ins:

  • 1/2 cup dark chocolate chips
  • 1/3 cup dried cherries
  • 1/3 cup slivered almonds

Instructions:

First, preheat your oven to 350 degrees F and line a 9 by 9 inch baking pan with parchment paper and set aside. In a large bowl, mix the oats, oat flour, salt, and cinnamon until well combined. In a medium bowl, add in ground flax and water and let sit for 5-10 minutes. Once the mixture has thickened, add in olive oil, almond butter, maple syrup, and vanilla extract and stir until smooth. Pour the wet mixture into the dry and use a large spoon to combine. Then, fold in your add-ins and pour the mixture into the baking pan. Place in the oven for about 20 minutes until golden brown on the edges and firm to the touch.
