Olive Oil Pancakes

Light, fluffy, and full of flavor, these easy olive oil pancakes are a simple way to upgrade your breakfast routine. Whether you use Meyer Lemon, Vanilla, Chocolate, or Crushed Mandarin Olive Oil, each variation adds a unique twist that makes every stack feel extra special.
Ingredients

1 packet Oak n Egg Sourdough Pancake Mix

1¾ cups milk

1 egg

3 tablespoons Wild Groves Olive Oil
(We love using Meyer Lemon, Vanilla, Chocolate, or Crushed Mandarin!) -
1 teaspoon vanilla extract
Directions

Mix the Batter
In a large bowl, combine the pancake mix, milk, egg, olive oil, and vanilla extract. Stir until fully combined. If the batter thickens as it sits, add a splash of milk or water to loosen it. -
Heat the Pan
Heat a skillet or griddle over medium heat and lightly grease with a small drizzle of olive oil. -
Cook the Pancakes
Using a ⅓ cup measuring cup, pour batter onto the heated skillet. Cook until bubbles begin to form on the surface and the edges start to set, then flip and continue cooking until golden brown and cooked through. -
Serve & Enjoy
Stack high and top with fresh fruit, maple syrup, powdered sugar, or your favorite toppings. Serve warm and enjoy!
